My favorite way to eat broccoli

...or most any vegetable for that matter.

Roasted Broccoli

Set oven to 400 degrees.

Cut up (at least) a head of broccoli into bite-sized pieces.

Put the broccoli in a bowl.

Drizzle olive oil over it (how much depends on how much broccoli).

Toss it around in the bowl. Use a spoon if your hand-eye coordination is not that great. :)

Sprinkle in some salt and pepper.

Toss some more.

Spread the broccoli out on a pan.

You want a pan big enough so that the broccoli is in one layer, and the pieces aren't really touching.

(If they're touching they'll just steam- not roast.)

Put the pan in the oven.

Let it cook for about 15 minutes.

Use a spatula to stir/flip the broccoli once or twice during the roasting.

Let it go til the broccoli is really starting to turn brown.

Take it out.

If you can hold off long enough, it tastes really good to grate some cheese over it... parmesan, romano, something like that.

Then eat it.

It's delicious. :)

Remember, don't be afraid to let it get REALLY brown.
